Ingredients:
Crust:
- 1/2 cup powdered sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 sticks unsalted butter, softened and sliced
Filling:
- 1 (8-ounce) package of softened cream cheese
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 (6-ounce) can thawed frozen limeade concentrate
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar
Glaze:
- 1 (6-ounce) can thawed frozen limeade concentrate
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar
Instructions:
- Preheat the oven to 350°F.
- For the crust: In a food processor, blend the powdered sugar, flour, and butter until a ball forms. Press the dough into a 12-inch tart pan with a removable bottom, ensuring to push it into the edges. Flatten until the crust is uniform. Bake for 10 to 12 minutes until slightly golden. Allow it to cool.
- For the filling and topping: Mix the cream cheese, sugar, and vanilla until smooth. Spread this mixture over the cooled crust.
- Cut fresh fruit and arrange it in your preferred design. Be creative!
- For the glaze: In a small saucepan, combine the limeade, cornstarch, lime juice, and sugar. Cook over medium heat until it thickens and becomes clear, about 2 minutes. Allow to cool. Use a pastry brush to glaze the entire tart. You will not use all of the glaze.
- Keep the tart refrigerated. Take it out about 15 minutes before serving. Slice it into 8 wedges and enjoy with a dollop of whipped cream.
