Springtime Fruit Tart

Ingredients:

Crust:

  • 1/2 cup powdered sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 sticks unsalted butter, softened and sliced

Filling:

  • 1 (8-ounce) package of softened cream cheese
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 (6-ounce) can thawed frozen limeade concentrate
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar

Glaze:

  • 1 (6-ounce) can thawed frozen limeade concentrate
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar

Instructions:

  1. Preheat the oven to 350°F.
  2. For the crust: In a food processor, blend the powdered sugar, flour, and butter until a ball forms. Press the dough into a 12-inch tart pan with a removable bottom, ensuring to push it into the edges. Flatten until the crust is uniform. Bake for 10 to 12 minutes until slightly golden. Allow it to cool.
  3. For the filling and topping: Mix the cream cheese, sugar, and vanilla until smooth. Spread this mixture over the cooled crust.
  4. Cut fresh fruit and arrange it in your preferred design. Be creative!
  5. For the glaze: In a small saucepan, combine the limeade, cornstarch, lime juice, and sugar. Cook over medium heat until it thickens and becomes clear, about 2 minutes. Allow to cool. Use a pastry brush to glaze the entire tart. You will not use all of the glaze.
  6. Keep the tart refrigerated. Take it out about 15 minutes before serving. Slice it into 8 wedges and enjoy with a dollop of whipped cream.
