These Peanut Butter Ice Cream Sandwiches, packed with the protein goodness of peanuts, are simple to make during those hot days that call for a chilled dessert. Simply bake chocolate chip cookies, slather them with peanut butter, place a scoop of ice cream in between, and roll the edges in chopped peanuts, chocolate chips, or toasted coconut for a deliciously sweet experience.

With around 4,000 active peanut farmers, there’s a good chance your peanuts – often called “nutrition in a nutshell” – originate from Georgia, the state responsible for producing 52% of the nation’s supply.
