These Peanut Butter Ice Cream Sandwiches, packed with the protein goodness of peanuts, are simple to make during those hot days that call for a chilled dessert. Simply bake chocolate chip cookies, slather them with peanut butter, place a scoop of ice cream in between, and roll the edges in chopped peanuts, chocolate chips, or toasted coconut for a deliciously sweet experience.

Peanut Butter Ice Cream Sandwiches

Yield: 12
24 fresh baked chocolate chip cookies (approximately 3 inches in diameter), cooled
1 1/2 cups creamy or crunchy peanut butter
1 1/2 quarts vanilla ice cream, slightly softened
chopped peanuts, for topping (optional)
mini chocolate chips, for topping (optional)
toasted coconut, for topping (optional)
On 12 cookies, place them top sides down and spread a layer of peanut butter. Add one scoop of ice cream to each. Create sandwiches by placing the remaining cookies on top.
If desired, roll the edges of the ice cream in chopped peanuts, mini chocolate chips, or toasted coconut. Arrange on a baking sheet and freeze until firm.
Serve slightly frozen.
