Dessert Twinkies

The State Fair of Texas was the first to introduce this indulgent dessert.

Serves 6 Twinkies

Equipment Needed:

  • Dutch Oven
  • Candy/Deep Fry Thermometer
  • Skewers (6)
  • Baking Sheet, lined with Parchment Paper
  • Paper Towels

Ingredients List:

  • 6 Twinkies
  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon sea salt
  • 1 cup buttermilk
  • 1/2 cup whole milk
  • 3 large eggs
  • 3 tablespoons unsalted butter, melted
  • Canola oil
  • Confectioners’ sugar

Instructions:

  1. Skewer each Twinkie and arrange them on a baking sheet lined with parchment paper. Freeze for 2 hours.
  2. While the Twinkies freeze, prepare the batter: In a large bowl, combine flour, sugar, baking powder, baking soda, and sea salt. Set it aside.
  3. In another bowl, whisk together the buttermilk, whole milk, eggs, and melted butter. Pour the mixture into the flour blend and stir until smooth.
  4. In a Dutch oven, heat 2 inches of canola oil over medium heat until it reaches 375 degrees Fahrenheit.
  5. Working in batches of two, dip the skewered Twinkies in the batter until fully covered. Carefully place them in the hot oil, turning them after a few seconds until they are light brown on all sides, about 4-6 minutes.
  6. Remove them and let them drain on paper towels, then sprinkle with confectioners’ sugar.
