Ingredients:
- 2 cups of Lucky Charms cereal
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 sticks of butter
- 1 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 cup Lucky Charms marshmallow bits
- 1/2 cup white chocolate chips
Directions:
- Prepare a large jelly-roll pan by lining it with parchment paper.
- In a food processor, grind the Lucky Charms cereal for 1 minute or until it becomes finely ground. Transfer this to a large mixing bowl. Add the flour, baking soda, and salt, then whisk everything together until blended.
- In another large bowl, use a mixer on medium speed to beat the butter along with both sugars for 4 minutes, until the mixture is fluffy and light. Incorporate the eggs one at a time, mixing until well combined. Lower the mixer speed to medium-low and add the flour mixture all at once. Beat until just combined. Gently fold in the marshmallow bits and white chocolate chips with a spatula or wooden spoon. Cover the dough and chill it in the refrigerator for 30 minutes.
- Preheat your oven to 375 degrees Fahrenheit. Portion out rounded tablespoons of dough onto the prepared cookie sheet, ensuring they are about 2 inches apart. Bake for 8 to 10 minutes or until they are lightly golden. Allow the cookies to cool on the cookie sheet for 5 minutes before transferring them to wire racks to cool completely.
