Almond-Apple Delight Cake

Ingredients: (6 servings)

2 medium apples

1 tablespoon coconut sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 cup almond flour

½ cup gluten-free oat flour

1 tablespoon coconut flour

A pinch of sea salt

1 teaspoon baking powder

2 large eggs

¼ cup Greek yogurt

¼ cup maple syrup

1 teaspoon vanilla extract

¼ cup almond flakes

Instructions:

  1. Remove the core from the apples, peel them, and cut into cubes. In a bowl, mix the apple cubes with coconut sugar, cinnamon, and lemon juice. Set this mixture aside.
  2. In a large mixing bowl, whisk together almond flour, oat flour, coconut flour, baking powder, and sea salt.
  3. In a separate smaller bowl, mix the eggs, Greek yogurt, maple syrup, and vanilla extract until the mixture is smooth and fluffy.
  4. Pour the wet mixture into the bowl containing the dry ingredients. Stir gently with a spoon, being careful not to over mix.
  5. Transfer the batter to a greased or lined round baking pan (about 8 inches in diameter). Layer the apple mixture on top, pressing them gently into the batter. Sprinkle almond flakes over everything.
  6. Bake at 350°F for 25-30 minutes, or until the top is golden brown. Allow to cool on a rack before slicing.
