Charmingly Lucky Cookies

Ingredients:

  • 2 cups of Lucky Charms cereal
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 sticks of butter
  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 cup Lucky Charms marshmallow bits
  • 1/2 cup white chocolate chips

Directions:

  1. Prepare a large jelly-roll pan by lining it with parchment paper.
  2. In a food processor, grind the Lucky Charms cereal for 1 minute or until it becomes finely ground. Transfer this to a large mixing bowl. Add the flour, baking soda, and salt, then whisk everything together until blended.
  3. In another large bowl, use a mixer on medium speed to beat the butter along with both sugars for 4 minutes, until the mixture is fluffy and light. Incorporate the eggs one at a time, mixing until well combined. Lower the mixer speed to medium-low and add the flour mixture all at once. Beat until just combined. Gently fold in the marshmallow bits and white chocolate chips with a spatula or wooden spoon. Cover the dough and chill it in the refrigerator for 30 minutes.
  4. Preheat your oven to 375 degrees Fahrenheit. Portion out rounded tablespoons of dough onto the prepared cookie sheet, ensuring they are about 2 inches apart. Bake for 8 to 10 minutes or until they are lightly golden. Allow the cookies to cool on the cookie sheet for 5 minutes before transferring them to wire racks to cool completely.
