Ingredients:
- Vegetable oil for frying
- 1 cup pancake mix (buttermilk)
- 1 tablespoon granulated sugar
- Approximately 1/2 cup water
- 1 teaspoon vanilla extract
- Powdered sugar and additional toppings
Instructions:
- In an 8-inch skillet, pour in enough oil to fill it halfway. Heat the oil on medium until it reaches around 360 degrees Fahrenheit.
- In a bowl, combine the pancake mix with water, sugar, and vanilla. The batter should have a consistency similar to cake batter, being neither too runny nor too thick. It should flow from the whisk in a ribbon-like manner. Pour the batter into a bottle with a 1/4-inch opening, or use a plastic bag with a corner cut off.
- To check if the oil is ready, drop a small amount of batter into the skillet. It should bubble and float without burning. Once the oil is hot enough, quickly squeeze the batter in a circular motion to form a disk about 5 inches in diameter. Cook for about one minute until the bottom is golden brown. Flip to cook the other side for another 30 seconds to 1 minute, until golden brown.
- Remove the cooked item from the oil and place it on a paper towel-lined plate. Dust with powdered sugar and enjoy while warm.
