Almond-Stuffed Baked Apples and Pears

This delightful dessert utilizes a touch of honey and the natural tastes of seasonal apples and pears to indulge any sweet tooth without the guilt.

Ingredients:

  • 4 small Granny Smith or Golden Delicious apples and/or pears (any variety of apple may be used based on availability or sale)
  • 1/4 cup unsalted almonds (chopped)
  • 2 tablespoons dried, unsweetened cranberries or raisins
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons honey

Directions:

  1. Preheat your oven to 400°F. Prepare a small baking dish with 1/4 inch of water and set it aside.
  2. Slice off 1/2 inch from the tops of the apples and keep the tops aside.
  3. Use a spoon or paring knife to core the apples, ensuring the bottoms remain intact.
  4. In a small bowl, mix the almonds, cranberries, and cinnamon together gently.
  5. Drizzle honey over the almond mixture, stirring until everything is well coated.
  6. Fill the hollowed apples with the almond mixture and replace the tops. Arrange the apples in the baking dish. Bake, covered loosely with aluminum foil, for 30 minutes. Remove the foil and continue baking for an additional 15 minutes, or until the apples are tender and lightly golden.
