**St. Patrick’s Day Sandwiches**

Yield: 8 sandwiches

8 ounces plain cream cheese spread, softened
1 cup finely shredded mozzarella cheese
Salt
4 English muffins
24 slices cucumber
8 thin slices green pepper
Fresh cilantro leaves
Lemon juice
Lemon slices, for garnish (optional)

In a bowl, combine the cream cheese spread, mozzarella cheese, and salt until well mixed.

Slice the English muffins in half and cut each half into a shamrock shape.

Spread the cheese mixture over each half of the muffins.

Top each “shamrock” with three cucumber slices, placing one on each “leaf.” Use a slice of green pepper as the stem, and add a cilantro leaf on top of each sandwich.

Drizzle lemon juice over the sandwiches and include lemon slices for garnish if desired.
