This delightful seafood dish is sure to bring joy to the entire family! Mild cod fish is sautéed in butter and topped with a vibrant salsa made from fresh oranges, cilantro, and red onion. Serves 4 (3 oz of cod plus ⅓ cup salsa and about 1 tablespoon sauce per serving).
Ingredients
1 pound boneless skinless cod, cut into 4 portions
¾ teaspoon coarse kosher salt plus a pinch, divided
¼ teaspoon pepper
2 tablespoons unsalted butter
1 cup Orange Tangerine Juicy Juice® 100% Juice
1 tablespoon honey
2 oranges
2 tablespoons chopped cilantro or parsley
2 tablespoons finely chopped red onion
3 to 8 dashes hot sauce, to taste, optional

Pat the cod fillets dry with a paper towel. Season the cod with ¾ teaspoon salt and ¼ teaspoon pepper. In a large skillet over medium-high heat, melt the butter. Add the cod to the skillet and cook without moving until the bottom is golden brown, approximately 2 to 4 minutes. Carefully flip the fillets using a slotted spatula, then lower the heat to medium-low. Continue to cook the fish until it’s just barely cooked through and flakes easily when gently probed with a knife, about 2 to 4 additional minutes depending on thickness.

Transfer the fish to a plate and cover it loosely with foil to keep warm. Pour the Orange Tangerine Juicy Juice® 100% Juice and honey into the skillet, raise the heat to high, and bring to a boil while scraping up any browned bits. Allow it to boil, whisking occasionally, until the juice reduces to about ⅓ cup and achieves a thick syrupy consistency, approximately 5 to 8 minutes.

In the meantime, remove the peel from the orange and chop it into small pieces. In a small bowl, mix the chopped orange, cilantro, red onion, hot sauce, and the remaining pinch of salt.
- Serve the fish on four dinner plates, drizzling it with the orange honey sauce and topping it off with the orange salsa.
