French Style Cheesecake with Vanilla Wafer Crust

Total time: 25 minutes, plus 3 hours refrigeration
Servings: 8
Crust:
2 cups crushed vanilla wafers
1 stick melted butter
1/4 cup brown sugar
Whipped Cream:
1 cup heavy cream
3 tablespoons sugar
1 teaspoon vanilla
Cheesecake:
8 ounces softened cream cheese
1 teaspoon vanilla
1/2 cup powdered sugar
To prepare the crust: Combine the crushed vanilla wafers, melted butter, and brown sugar; then press the mixture into a pie pan or individual pudding cups.
To prepare the whipped cream: In a large bowl, use an electric mixer to blend the heavy cream, sugar, and vanilla until it thickens into whipped cream.
To prepare the cheesecake: Add the softened cream cheese, vanilla, and powdered sugar to the whipped cream mixture. Using the electric mixer, blend until smooth. Pour the cheesecake filling over the vanilla wafer crust and refrigerate for 3 hours.
