White Chocolate and Pumpkin Pie Spice Popcorn Bites

12 cups unsalted, unbuttered popped popcorn
3 cups chopped white chocolate or white chocolate chips
1 tablespoon light olive oil
2 teaspoons pumpkin pie spice
1/2 cup toffee bits
1 teaspoon crushed flaked sea salt
Prepare a large, rimmed baking sheet by lining it with parchment paper or wax paper. Place the popcorn into a large mixing bowl.
In a microwave-safe bowl, mix the white chocolate, olive oil, and pumpkin pie spice; microwave on medium for 2-3 minutes, or until melted and smooth, stirring every minute.
Pour the melted chocolate mixture over the popcorn; add the toffee bits and stir to combine well. Transfer the mixture to the prepared baking sheet, spreading it out to the edges; sprinkle the sea salt on top.
Allow it to cool; refrigerate for 1-2 hours, or until firm. Break into pieces for serving.
