Nutritious Avocado and Greens Salad

As a versatile fruit that contains beneficial fats and nearly 20 essential vitamins and minerals, avocados can enhance a heart-healthy diet when used as a substitute for saturated fats.

Servings: 8

Ingredients for Dressing:

1 tablespoon lemon juice
2 tablespoons apple cider vinegar
4 dates, pitted and softened
2 teaspoons Dijon mustard
1/4 cup olive oil

Ingredients for Salad:

2 Avocados From Mexico, sliced
6 cups Brussels sprouts, shaved or shredded
3 cups lacinto (dinosaur) kale, shredded
1 cup red onion, sliced
1/2 cup pistachios (or pumpkin seeds), shelled
Reduced-fat (sharp) Parmesan cheese, shaved or grated, for topping (optional)

Preparation of Dressing:
In a food processor, blend together the lemon juice, apple cider vinegar, pitted dates, and Dijon mustard. Gradually add the olive oil while continuing to mix until well combined.

Preparation of Salad:
In a large salad bowl, combine the sliced avocados, shaved Brussels sprouts, shredded kale, red onion, and pistachios. Drizzle the dressing over the salad and toss to ensure everything is evenly coated.

Top with shaved Parmesan cheese, if desired.
